Tasty Tuesday: Pyles of Pasta
David Pyles started his self-named food truck, 'Pyles of Pasta,' in April of this year. The truck serves up a classic favorite: pasta. David adds bold flavors to the beloved comfort food.
"I wanted to do my own thing; I wanted to have my name on something. I wanted it to be different cuisine and something different that would appeal to people," he said.
The food truck travels throughout Fairmont and Morgantown offering up pasta, sandwiches, salads, appetizers and drinks like lemonade and mango green tea.
"The A-1 steak sandwich is good and the buffalo chicken pasta is good," said Sarah Flowers, who said she likes to get Pyles of Pasta for for lunch when it parks by her office.
"I like the chicken bruschetta pasta and their garlic bread is awesome, too," said another customer, Tim Dorey.
Each day, the truck serves up a different special, like today's take on shrimp scampi. The scampi had fresh shrimp and veggies, penne pasta, and a white wine garlic butter sauce.
"It's a reward in itself when people say they love my food or come back for the same dish," David said.
Other pasta dishes include the buffalo chicken pasta, the cajun chicken, and the chicken bruschetta. They also serve up sandwiches like the popular A-1 cheese-steak and occasional specialties like deep-fried pumpkin ravioli.
Locals say they love the truck for not only the delicious menu, but also for the convenience.
"It's convenient and good; they have great food and great service," Dorey said.
"It's comfort food that you don't have to go sit down at a restaurant and wait an hour for," said Flowers.
David says his favorite thing about running his food truck is getting to make food people love in a different place each day.
David said, "This food truck allows me to move to different spots and see different places and people; that's probably what I love most about this, is the people."
